The olfactory variables are an important ingredient but not the only one, in deciding the taste-scent type and clearly set this wine apart from conventional Bruts.
Over 30% of the wines ferment and mature in small white oak casks for no less than 7 months. A natural asset which, when blended with the remaining selections, helps to perfect and enhance the overall balance.
Grapes: 72% Chardonnay, 28% Pinot nero
An exuberant white mousse. The perlage tight and persistent, with very obvious and well distributed bubblechains. Its colour is a bright light green gold. The bouquet reveals itself through very pronounced accents that provide a particular refinement and complexity. The dominant floral notes of hawthorn, sagebrush and bay leaves are distinct, broad and voluptuous. The scent of white ripe fruit is delicate yet detectable and it adds harmony and a gentle olfactory experience. The flavour is dry, exceptionally elegant and pleasing with an aristocratic background of jam and incense that is particularly persistent. It has body yet is wrapped in a silky texture and exceptional energy. The well-rounded acidity helps to enhance the wine’s strong personality and character.
